In April 2010 I went up against 14 other chefs in the Dallas - Fort Worth area in a one pot stage cooking competition. The format for this type of competition requires that the dish be cooked entirely in a single pot and that nothing come out of the pot until the dish is plated. I prepared crawfish and shrimp jambalaya with homemade andouille sausage and okra. It was a fun competition and guess who took home a gold medal!!! I actually got second place in the whole competition but because it is based on points, everyone is eligible for a gold medal. Only two of us received the gold. I can't wait to participate again!!!
